Tofu Bao Buns

Ingredients
- 250 ml white vinegar
- 400 ml water
- 60 g caster sugar
- 10 g salt
- 1 ½ red onion, thinly sliced
- 1 cucumber, sliced
- 125 g flour
- 30 g cornstarch
- 150 g panko breadcrumbs
- 100 g sesame seeds
- 600 g Lunter Smoked Tofu, cut into slices

- 10 bao buns
- 120 ml hoisin sauce
- 100 g bean sprouts
- fresh coriander leaves
Instructions
In a bowl, combine 250 ml of lukewarm water, white vinegar, caster sugar and salt.
Stir until the sugar has dissolved, then add the thinly sliced red onion and cucumber.
Mix to combine, then set aside to pickle.
Combine the cornstarch and 120 ml water.
Place the flour, cornstarch slurry and panko breadcrumbs into individual bowls.
Season the flour with salt and pepper and mix the sesame seeds into the breadcrumbs.
Crumb the tofu slices by coating them with seasoned flour, cornstarch slurry, then sesame panko crumbs.
Heat a pan over medium heat with a drizzle of oil.
Pan-fry the crumbed tofu slices for 2–3 minutes on each side, or until golden brown and crispy.
Place on a plate lined with paper towels and repeat with the remaining tofu slices.
Steam the bao buns according to package instructions. To assemble, spread each base with hoisin sauce.
Lay pieces of tofu on top, then add pickled cucumber, red onion, and bean sprouts. Finish with coriander and serve.
