This was one of those moments when food truly surprises you. At an event organized by SZKC – the Slovak Association of Chefs and Confectioners, our chef Mathias Martin took the stage and completely redefined what people think tofu can be. In front of an audience of 50 curious food lovers and professionals, he prepared okara fries with bryndza dressing, barbecued tofu cuts à la ribs, and fresh chimichurri. Guests watched the dishes come to life, learned about different tofu techniques, and discovered the versatility of tofu and okara in every bite. The tasting that followed sparked genuine excitement — many admitted they didn’t expect flavors like these. Judging by the reactions, surprised smiles, and empty plates, tofu definitely made a few new fans that day.
