Ingredients

Yeast Starter

  • 14 g fresh yeast
  • 6 g granulated sugar
  • 70 g lukewarm milk

Dough

  • 80 g LUNTER Soyannaise
  • 260 g all-purpose flour
  • 50 g fine wheat flour
  • a pinch of salt
  • 20 g egg
  • 20 g vegetable oil
  • 12 g granulated sugar

Finishing

  • 10 g all-purpose flour for dusting
  • 6 g egg for brushing

Filling

  • 150 g LUNTER Creme de Tofu
  • 40 g granulated sugar
  • 20 g vanilla sugar
  • 10 g vanilla pudding powder
  • 6 g rum
  • 4 g grated lemon zest

Topping (optional)

  • chopped almonds or streusel, to taste

Instructions

Mix the ingredients for the yeast starter and let it rise.

Sift the flours into a bowl, add the yeast starter, egg, oil, sugar, salt and LUNTER Sojanéza. Knead into a smooth, elastic dough.

Let the dough rise; during rising, gently knead it 1–2 times.

Prepare the filling by mixing all ingredients into a smooth cream.

Divide the risen dough into 8 equal pieces (about 60 g each). Shape into buns and slightly flatten them on a baking tray.

Press a small indentation in the center, brush the edges with egg and fill with the prepared filling.

Sprinkle with chopped almonds or streusel if desired.

Bake at 170 °C until golden brown.
