- ⅓ tonka bean
Syrup for the ladyfingers:
- 250 ml espresso
- 120 ml elderflower syrup
- 40 ml limoncello
- zest of 1 lemon
Other ingredients:
- approximately 350 g Savoiardi ladyfingers
- 20–30 g dried or candied elderflowers
Garnish:
- 50 g white chocolate
- lemon zest
- micro mint
- fresh elderflowers
- freeze-dried raspberries
Instructions
Chop the white chocolate and melt it slowly in a bain-marie at approximately 40–45 °C. Leave to cool slightly.
Place the Lunter Crème de Tofu, Lunter Tofu Natural, vegan mascarpone, plant-based whipping cream, elderflower syrup, lemon juice, lemon zest, vanilla, tonka bean and salt in a blender. Blend for approximately 2 minutes. While blending, gradually pour in the melted white chocolate and continue blending for another 3–4 minutes. The cream should be smooth and glossy. Cover with cling film so that it touches the surface of the cream, and chill for at least 2 hours.
Leave the espresso to cool. Add the elderflower syrup, limoncello and lemon zest, then mix.
If using fresh elderflowers, separate the small blossoms from the stems. If using dried or candied flowers, crush them gently.
Arrange the first layer of ladyfingers briefly dipped in the prepared syrup in the bottom of the glasses. Soak them for no more than 1–2 seconds. Add a layer of tofu cream, sprinkle with elderflowers, then add a second layer of ladyfingers and another layer of cream. Smooth the surface.
Leave the dessert to rest for at least 6 hours, ideally overnight.
Before serving, garnish with white chocolate, lemon zest, micro mint, elderflowers and freeze-dried raspberries.
