Paprika-Okara Gnocchi

Ingredients
Okara-Buckwheat Gnocchi
- 500 g Lunter Okara
- 250 g buckwheat flour
- 250 g whole wheat flour
- 3 eggs
- salt
- pepper
- nutmeg
Paprikasauce
- 650 g onion
- 60 g paprika powder, sweet
- 800 g Lunter Tofu Marinated Sweet Chilli, crumbled with a fork
- 1 pinch hot paprika (or to taste)
- 650 ml vegetable stock
- 80 ml Lunter Creme de Tofu
- lemon (juice and zest)

Instructions
Knead the okara, buckwheat flour, whole wheat flour and egg into a dough and season.
Form the gnocchi and poach in salted water.
Salt the onion well and soften, but don’t let it take on too much color.
Add the paprika and fry briefly, then deglaze with the stock.
Reduce a little and stir in the Creme de Tofu and finely puree the sauce with a hand blender.
Add the crumbled tofu, season to taste with salt, lemon and lemon zest and bring to the boil.
Season with salt, lemon and lemon zest.
