Sour Vinegar Onion & Salami

Ingredients

  • 750 g Lunter Tofu Seitan Salami
  • 5 tbsp mustard
  • 5 tbsp apple cider vinegar
  • 10 tbsp oil
  • 625 ml stock
  • 2 bell pepper, small cubes
  • 8 tomatoes, small cubes
  • 10 tsp capers, chopped
  • 5 pickles, fine sticks
  • 5 tbsp vinegar
  • 2 red onions, finely chopped
  • 5 tbsp parsley, finely chopped

Instructions

Cut the seitan into fine strips.

Mix mustard, apple cider vinegar, 2 tablespoons of oil, stock and season with spices.

Pour the marinade over the seitan and leave to marinate for at least 30 minutes.

Mix the bell pepper, tomato, capers, gherkins, 5 tablespoons oil and vinegar and season with spices.

Remove the seitan from the marinade and drain a little.

Arrange the salad mixture in the middle of a plate, top with marinated seitan and sprinkle with onion and parsley.
