Couscous with vegetables

Ingredients

  • Vegetable Oil 2 tsp
  • LUNTER Tofu Smoked 1 block
  • Pepper 1 cup
  • Frozen Peas 1/2 cup
  • Canned Chickpeas 1/2 cup
  • Garam Masala 2 tbsp
  • Smoked Paprika 2 tsp
  • Couscous 1/2 cup
  • Vegetable Stock 1 1/5 cups 14 190 ml
  • Lemon Juice 2 tsp
  • Salt 1/2 tsp

Instructions

Roughly chop the tofu. Heat the oil in a pan then fry until golden brown.

Chop the peppers, then add to the pan alongside the peas, chickpeas, and spices. Sauté.

 Add the couscous. Pour in the stock. Cover and simmer for 5 minutes.

 Season with salt and lemon juice, then serve garnished with chopped parsley!
