Curry yellow

Ingredients

  • Olive Oil 1 tbsp
  • Carrots 3/4 cup
  • Broccoli 1/2 cup
  • White Onions 1/4 cup
  • Ginger 1 tsp
  • Turmeric 2 tsp
  • Ground Coriander 1 tsp
  • Ground Cumin 1 tsp
  • Vegetable Stock 1 cup
  • LUNTER Tofu Natural 4/5 block
  • Soy Sauce 2 tsp
  • Coconut Milk 1 cup
  • Tomato Purée 1 tbsp

Instructions

Chop the carrots and broccoli into small chunks. Sauté in the olive oil, then add finely chopped ginger and all of the spices.

 Add the stock and cover, simmering for 8 to 10 minutes.

 While the stock and vegetables are simmering, dice the tofu. Add soy sauce and fry in a separate pan with some oil until golden brown.

 Add the tofu, coconut milk, and tomato purée to the main pot. Stir and simmer for another minute.

 Serve with rice!
